Austrian Chef Opens Bar in Lanzarote

Austrian Robert Kudler lived in Berlin, where he worked as a precision carpenter and joiner, until he relocated to Lanzarote for family reasons. With prior experience in hospitality, he decided to open El Salsero, a neighbourhood bar in La Vega, Arrecife, close to the Red Cross.

In an interview with the radio programme Más de Uno Gourmet from Radio Lanzarote-Onda Cero, he explains why he offers a varied menu depending on the day of the week.

How Does an Austrian Chef End Up in Lanzarote?

“The blame” lies with my mother-in-law, who has lived here for many years. My wife said, “We have to go to Lanzarote because my mother is getting older and needs help.” We used to live in Berlin.

And You Started a Hospitality Business…

My profession as a precision carpenter and joiner is a bit challenging here due to the lack of machinery, so since I had previously worked in hospitality, I decided to open a bar in La Vega called El Salsero.

What Can Visitors Expect on Your Menu?

I have a very simple menu with sandwiches and snacks, but at lunchtime, I always offer a daily dish that varies widely. I open from Monday to Friday, from 7:00 am to 8:00 pm.

What Do You Offer Each Day of the Week?

On Mondays, I always serve vegetarian food. Most people, after a heavy weekend, look for something lighter on Mondays.

On Tuesdays, as there is a burger place across from me that is closed on that day, I’ve decided to offer themed burgers based on different countries. I have a world map, and according to where my finger lands, I include a special dish or flavour from that country.

Wednesdays feature more exotic foods, including curries from India or Thailand, and similar dishes. On Thursdays, we cater to the local area with stews or hearty dishes. Finally, on Fridays, since I’m usually more tired, I keep it simple and serve pasta (laughs).

I Understand You Don’t Open on Weekends. Where Exactly is Your Venue?

Yes, I only open from Monday to Friday. The bar is located at 4 Santander Street, very close to the Red Cross and the Insular Library.

You Also Attend Fairs Quite Often…

Yes, the last one was at the circus, where I had a food truck offering fried sweet potato from the local area. I also make my own special sauces, such as guava aioli.
